April's Eggless Potato Salad

Ingredients
10 medium potatoes
3 celery stalks, chopped
1 small carrot, chopped
1 medium onion, chopped (or 3 bunches green onions)
1 tsp. dill (3 tsp. if fresh)
1 Tbs. chives, chopped
Celery Seed
1/4 tsp. celery seed
1 cup mayonnaise
1 Tbs.. prepared yellow mustard

Cook potatoes in boiling water for 20 to 25 minutes or till just tender. Drain. Peel and cut potatoes into cubes. In a large bowl combine celery, carrots, onion, dill, chives and celery seed. Add potatoes. Mix together the mayonnaise and mustard and add to the potato mixture. Mix gently. Chill 12 to 24 hours. Serves 10.

Larger quantity of the herbs may be used if desired.
